Easy No Bake Chocolate Éclair Cake Recipe

Growing up, my mom used to make this No Bake Chocolate Éclair Cake Recipe for special occasions.  It was always a huge hit with everyone.  I was craving it the other day so I decided to make it for my kids.  IT IS JUST SOOOO GOOD !!!  But be forewarned, if you bring this to a potluck, you will not be bringing any home because I guarantee it will be completely eaten before you leave. Your whole family will love this Easy No Bake Chocolate Éclair Cake!

No Bake Chocolate Éclair Cake

No Bake Chocolate Éclair Cake Ingredients:

For Cake:

• 1 (1 lb) box graham crackers
• 2 (3 1/4 oz) boxes instant French vanilla pudding
• 3 1/2 cups milk
• 8 oz Cool Whip topping, thawed

For No Bake Chocolate Éclair Cake Icing:

• 1 1/2 cups confectioners’ sugar
• 1/2 cup cocoa
• 3 tbl butter, softened
• 1/3 cup milk
• 2 tsp light corn syrup
• 2 tsp pure vanilla extract

No Bake Chocolate Éclair Cake

No Bake Chocolate Éclair Cake Directions:

  1. Butter the bottom of a 13x9x2 pan and line with whole graham crackers and set aside.
  2. Mix pudding with milk and beat at medium speed for 2 minutes.
  3. Fold in Cool Whip.
  4. Pour half the pudding mixture over graham crackers. Place another layer of whole graham crackers on top of pudding layer. Pour over remaining half of pudding mixture and cover with another layer of graham crackers.
  5. To make frosting, blend together sugar and cocoa. Then add butter and milk and mix well. Next add corn syrup and vanilla and stir until creamy.
  6. Cover the top layer of graham crackers with frosting and refrigerate for 24 hours.

Delicious Candied Walnuts Recipe

Candied Walnuts Recipe

I just made the best candied walnuts and wanted to share it with all of you. Seriously my kids and I just ate so many and now I need to make more !!!  It was so much easier than I thought it would be and I didn’t have to pay the high price that you would pay for them to already be candied when you purchase them.  And the best part is that most of the ingredients you probably already have on hand.

Ingredients

  • 1 pound walnut halves
  • 1 cup white sugar
  • 2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 6 tbl milk

Directions

  1. Preheat oven to 350 degrees F. Spread nuts in a single layer over a baking sheet. Roast for approximately 8 to 10 minutes or until the nuts start to turn brown.
  2. Stir together sugar, cinnamon, salt vanilla and milk in a saucepan. Cook over medium-high heat for 8 minutes or until the mixture reaches 236 degrees F.
  3. Add walnuts to mixture and stir well to coat. Spoon nuts onto waxed paper and immediately separate into a single layer.
  4. Allow to cool and enjoy !

4th of July Dessert Using Dole Frozen Blueberries #GetFrozen #TeamDole

DOLE frozen fruit is a great way to keep delicious tasting fruit on hand so that you can eat it whenever the mood strikes.  I absolutely love keeping Dole frozen mixed berries in my freezer to make smoothies with.  They are such healthy snacks for the kids and I to have any time of day.

With 4th of July coming up, I thought I would share a super simple recipe using Dole Frozen blueberries, strawberries, cool whip and cake mix.

It can’t get much easier than this….

  1. Make the cake mix as directed on the box in a rectangle pan and allow it to cool.
  2. Top cake with cool whip and spread smooth.
  3. Slice up a pint of strawberries.
  4. Place Dole blueberries into the top left corner.
  5. Lay your sliced strawberries into rows for the flag stripes.
  6. ENJOY !!!

Several Cheese Fondue Recipes + Free Cheese Fondue at Melting Pot

Voodoo Cheddar Fondue

Ingredients:

  • 2 ¾ cups (11 ounces) shredded cheddar cheese
  • 3 tablespoons all-purpose flour
  • 1 cup beer (light beer recommended)
  • ½ cup diced tomatoes with green chiles
  • 2 teaspoons finely chopped garlic
  • ½ cup cooked baby shrimp
  • 1 teaspoon freshly ground pepper

Instructions:

Toss the cheese with the flour in a bowl. Place a metal bowl over a saucepan filled with 2 inches of water. You may also use a conventional double boiler. Bring the water to a boil over high heat. Reduce the heat to medium and pour the beer into the bowl. Stir in the tomatoes with green chiles and garlic using a fork. Cook for 30 seconds, stirring constantly.

Add half of the cheese and cook until the cheese is melted, stirring constantly. Add the remaining cheese a small amount at a time, stirring constantly in a circular motion after each addition until the cheese is melted. Fold in the shrimp and pepper. Pour into a warm fondue pot and keep warm over low heat. Serves 4 to 6.

Note – The cheese is shredded and tossed with flour to aid in thickening and to improve the viscosity of the fondue. The fondue should be the consistency of warm honey when completed. Monitor the cheese carefully as it is being added. Not all the cheese may be needed, and, in some cases, more cheese may be needed to reach the perfect consistency.

Serves 4 to 6

Wisconsin Trio Cheese Fondue

Ingredients:

  • 1 ½ cups (6 ounces) shredded Butterkase cheese
  • 1 ½ cups (6 ounces) shredded Fontina cheese
  • 3 tablespoons all-purpose flour
  • ¾ cup white wine
  • ¼ cup dry sherry
  • 2 teaspoons chopped shallots
  • 1 teaspoon freshly ground pepper
  • ¼ cup crumbled Blue cheese
  • 2 tablespoons chopped scallions

Instructions:

Toss the Butterkase and Fontina cheese with the flour in a bowl. Place a metal bowl over a saucepan filled with 2 inches of water. You may also use a conventional double boiler. Bring the water to a boil over high heat. Reduce the heat to medium and pour the white wine and sherry into the bowl. Stir in the shallots using a fork. Cook for 30 seconds, stirring constantly.

Add half the cheese blend and cook until the cheese is melted, stirring constantly. Add the remaining cheese blend in a small amount at a time, stirring constantly in a circular motion after each addition until the cheese is melted. Fold in the pepper and Blue cheese. Pour into a warm fondue pot and keep warm over low heat. Garnish with the scallions.

Serve with artisan breads, seasonal vegetables and apple slices for dipping.

Serves 4 to 6.

Bourbon Bacon Cheddar Fondue

Ingredients:

  • 2 3/4 cups (11 ounces) shredded cheddar cheese
  • 3 tablespoons all-purpose flour
  • 1 cup beer (light beer is recommended)
  • 4 teaspoons prepared horseradish
  • 4 teaspoons dry mustard
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon bourbon
  • 2 tablespoons chopped cooked bacon
  • 2 teaspoons freshly ground pepper
  • 4 teaspoons chopped scallions

Instructions:

Toss the cheese with the flour in a bowl. Place a metal bowl over a saucepan filled with 2 inches of water. You may also use a conventional double boiler. Bring the water to a boil over high heat. Reduce the heat to medium and pour the beer into the bowl. Stir in the horseradish, mustard and Worcestershire sauce using a fork. Cook for 30 seconds, stirring constantly.

Add half the cheese and cook until the cheese is melted, stirring constantly. Add the remaining cheese a small amount at a time, stirring constantly in a circular motion after each addition until the cheese is melted. Pour the bourbon slowly around the edge of the bowl. Pull the cheese mixture away from the edge of the bowl and cook for about 30 seconds or until the alcohol cooks off. Stir the bourbon into the cheese. Fold in the bacon and pepper. Pour into a warm fondue pot and keep warm over low heat. Garnish with scallions.

Serve with artisan breads, seasonal vegetables and apple slices for dipping.

Serves 4 to 6.

Crockpot Chicken Recipe RoundUp – 40+ Slow Cooker Recipes You Must Try

slowcooker-chicken Yesterday I picked up 40 lbs of boneless, skinless chicken breasts from Zaycon Foods.   With all this chicken in my freezer, I knew I wanted recipes that I could make using my Crockpot.  Anything that is easy and tastes good is right up my alley !!!

My Go-To Crockpot Chicken Recipe is Pulled BBQ Chicken.  It can’t get much easier than this.  I pour in a bottle of Kraft Original BBQ Sauce and add 4 large breasts.  Cook on high for about 4-6 hours.  Then I take 2 forks and pull apart the chicken while stirring it into the sauce.  This makes the best sandwich.  My kids absolutely LOVE this recipe and I love how easy it is.  I usually make double the recipe and freeze some for later. nachos

A recipe my friend Liza from AddictedtoSaving shared with me was taking 4 chicken breasts and adding a jar of salsa and 1/2 a packet of taco seasoning to the crockpot and cooking on high for 4-6 hours.  Once I pulled the chicken apart and mixed it with the liquid, I placed it over tortilla chips and topped with a Mexican 4 Cheese mix.  Then I broiled it in the oven just enough to melt the cheese.  My kids and I absolutely loved it.  ** I guess most people would add black olives and tomatoes and jalapenos but my kids are super picky  LOL

Ingredients:

·      8 Strawberries, hulled and halved
·      2 Tbsp. sugar
·      2 Tsp vanilla extract
·      4 Mrs. Freshley’s Dreamies

Directions:

1.    Combine cut strawberries, sugar and vanilla extract in medium bowl, refrigerate for 1 hour for juices to combine.
2.    Slice Mrs. Freshley’s Dreamies diagonally and place in a heart shape.
3.    Top Dreamies with strawberry mixture.
4.    If desired, drizzle with chocolate syrup.

Fudge Conversation Hearts

Ingredients:

·      Mrs. Freshley’s Fudge Rounds
·      Heart and letter stencils
·      Powdered sugar
·      Sifter

Directions:

1.    Place stencil on top of a Mrs. Freshley’s Fudge Round.
2.    Sift some powdered sugar over the stencil and Fudge Round.
3.    Remove the stencil, revealing the desired designed.

Chocolate Lovers Kabobs

Ingredients:

• 8 Mrs. Freshley’s Chocolate Bells, halved
• 1 Package of strawberries, hulled
• 1 Package marshmallows
• 1 Package wooden skewers
• Melting chocolate

Directions

• Place one halved Mrs. Freshley’s Chocolate Bell on wooden skewer.
• Next place one strawberry, followed by one marshmallow.
• Repeat steps until skewer is full.
• Prepare melting chocolate according to package directions and drizzle over kabobs.
